It´s exactly as it sounds. This happened twice already in my game and I am not sure, if it is in the mod, or I experienced some bug.
So, it goes like this: Someone gets egg from his/her dragon and gives it to son/daughter/whoever. After some time, egg disappears.
First time, I wasn´t even sure, if I didn´t just create that egg in my mind (my dragon was super fertile, 3 eggs in span of about 10 years, so I wasn´t sure if he even had that third one), but second time, I watched it closely (for some reason, nobody could even get option to tame a dragon, until some random Mantaryan, who was in different county, got it and then got egg from it, which she gave to her daughter). And after some time, egg suddenly wasn´t there, but that woman became ill, depressed and one more health thing (stressed, maybe?).

So, egg doesn´t hatch, but disappears, and its owner immediately gets bunch of negative health traits. Is this something intended (egg didn´t hatch, so game removed it), or did I just encounter bug? (I should also mention that my dragon was first one, had 2 eggs, which hatched and then came 2 eggs that disappeared...so it´s not like 1 egg hatched and another disappeared, another one hatched and so on).
 
And it happened third time in row. It seems that instead of egg hatching, it just removes Dragon egg trait and no dragon is born.

He failed to hatch the egg is my bet.
 
Yeah it does sound like they are just failing their attempts at hatching the eggs.
 
Actually, after thinking about it, I used console to remove Dragon Egg from myself (I got it from ruin, but because I manually started that event with merchant from Yi Ti, I decided to not keep it) and only after that, eggs from my dragons started disappearing (and also, I never had problem with egg from living dragon not hatching, but disappearing instead, and I play as dragonlords a lot). It seems unrelated, but it was only thing different from my other gameplays with dragons, and it was only present in that one save.

Then you have been very lucky. What you are describing is a failed attempt to hatch the egg, not a bug.

Be thankful that's all that's happened so far when your relatives fail at hatching an egg. If memory serves, failure can lead to anything from serious injuries and maiming to death or even the countryside being set ablaze.
