I think it's impossible. Even if you change the end date in defines.txt the game will end. But the start date is possible to edit.
From previous post in the Rome threads I think this to is correct. I would love to chang my games end date but it can't be done without "changing" the exe which I will not do.
The end date section in defines.txt only changes the last possible date you can start a campaign with, it doesn't change when the game actually ends. The only way to do that is to edit the romegame.exe file, which will void tech support.
