Every time I'm playing a European principality I see Austria taking over small chunks of Hungary and all of Bohemia after the hussite charlie foxtrot. I tried to play as Austria and haven't had any of this happen yet through events, but it seems unlikely that the same damn thing happens every time. This led me to wonder, is there any way I can look at all of the events for a specific country?

Sure. Open any of the .eue files in the AGCEEP events subdirectory. In case of Austria it´s:
AGCEEP_Specific_Austria.eue
with any suitable program like notepad or wordpad or open office.

i would assume that you reffering to the "ai only" events, since those you would never get them in the first place if human; quiet a lot of nations, especially the majors , do have such " help along" default imputs.
therfore, if curious, check the events condition as well in those event file that Dragon mentiones above, in order to figure out better in how ai nations are "helped" to take a more historical path.
generally, but not always i think, the ai events are at the bottom of each of the nations event file.
