This is true for a 2D map, but in a video game they could actually represent the map as a sphere. I bet we'll get a true globe for a paradox game eventually, but definitely not in CK3.
Not being able to zoom out and see the entire map would be an enormous downgrade for no real gain beyond some people on the forums thinking "it is more realistic'. The current Paradox method of handwaving the projection in favor of what works out best gameplay-wise is perfectly fine.

In the far future you can switch dynamically between a globe and any projection of your choosing, I hear this fabled time will take place sometime after TES6 is released.
 
So the Q&A video just confirmed most of Indonesia will be on the map including "a few counties in New Guinea", but no Papua. And in Africa the map will be expanded down to Zanzibar.

Which is nice, but does awkwardly cut off Kilwa.

Well google figured it out in like 2008 or something so giant waste of time aside it would be pretty nifty.
