I don't know why African Empire such as Songhai don't have cavalry. Well I know nothing about the history of the region, but a quick search on the web showed that the Songhai army fielded a large number of cavalry. At the battle of Tondibi (1591 though) they even had more cavalry than infantry to oppose to the Morrocan army.
Well, nations south of the equator had none, iirc. Shaka Zulu thought the English with fast-moving infantry only, and that was even beyond EU4's timespan. Horses do not natively appear in Africa, and the zebra cannot be domesticated like horses. To represent this in the game you could make a subsaharan techgroup for nations like Songhai and Mali and a African techgroup for nations south of Songhai which do not have horses. Anyway, Mali and Songhai should at least have the option to recruit mercenary cavalry.
Before you Westernized you should have spent all your Mil points on getting a good general, since there's nothing better do with it. Since you had QFTNW you could get conquistador and explorers.

The nice thing is that the AI usually doesn't send monster stacks to the colonies, at least from what I've seen. I romped around South America in the 1700s with 10k guys. Usually is only usually, though. I have seen France get carpet sieged because it's army got caught on the Gold Coast. Can you get a good ally? Spain has allied with Morocco so it's not out of the question. I hope you're lucky!
I wish you could add specified enemies to the Viewinator, showing Army size and MP. Or set a wake-up call for when Spain gets to 10k army or 30k Army+MP. There will be times when the Europeans are vulnerable to you.
