Italy is cool and challenging. So is Spain, PR China and Nat. China. Romania, Hungary, Brit.Raj (India) are fun and challenging as well.

UK is really challenging and hard. Too little of everything compared to needs.
Rep Spain can develop into a horror movie, especially if you win SCW and join the Comintern.
All British Commonwealth countries are very interesting and good beginner choices.
Ireland if you join Allies is very interesting and might be even more so if joining Axis.
Actually, I don`t think there is any country in IC that lacks interest.

Sweden can be a good challenge; if you join the Axis, invade Norway and with Finland going to war against SU in 1941 you may have the chance to create a new nation, Kalmar Union.
