Every 5-10 minuets the game will stop responding, quickly minimize to desktop, and then the crash reporter will come up. I crashed about 4 times tonight.

I included the logs from the 2 most recent crashes. I checked and all four error logs from tonight are basically identical. I included my pdxsettings text and my systems log. I also included my dxdiag.

I don't run any antivirus software. I am running the most recent NVIDIA drivers.

I was getting similar error logs to you. What fixed it for me was uninstalling my nvidia driver, restarting, downloading the driver again straight from nivdia's website, and restarting again. Not sure if you download your drivers through Geforce Experience, but I know a few people that have had issues with their drivers when downloading through there. After this I'm for sure going to be downloading from the website instead.

Your error logs seem to indicate something going on with the video card which seems odd. Your drivers seem up to date.

I'd maybe try a clean uninstall and reinstall of the Nvidia drivers. When you install the nvidia drivers there's a 'clean install' checkbox

I also know that AMD Vega users seem to have issues with the latest drivers. You could also try rolling back 1 revision to see if that helps as well.
 
I got busy for a bit, but I've had some time so I took everyone's advice and did a total driver uninstall with a fresh install using the downloaded drivers from the Nvidia website instead of using Geforce experience. The game crashed within 5 minutes again. Same exact error messages in the error log. I've attached them.

To describe the crash in more detail:
1. My other two monitor will temporarily turn light gray obscuring everything on the screen, a few seconds later my primary monitor running the game will then go black
2. Next the game will minimize showing my desktop at which point the other monitors also revert back to showing my desktop
3. The game will remain minimized with the music still playing for about 5-10 more seconds before it will then crash and the paradox crash manager will come up

Every crash has the same exact error log:

Are you overclocking anything? If so does undoing that help the issue at all?
 
I asked because at least two users have reported that as causing the GPU errors you see in that error log.

If you wanted to go for a refund I wouldn't blame you.

I went ahead and did more testing. If I turn off vsync the game crashes instantly upon loading into the map. This is consistent. If I run the game windowed, it also does this. Crashing like this gives me different error logs than my normal crashes.

So full screen with vsync on is the only way I can run the game without it crashing, however I still crash within 5-10 minutes anyway.

I've attached the error logs from when I tried vsync off and windowed mode.

Another bug in the game is that it does not honour the refreshRate setting when Vsync is disabled, so the GPU will go crazy. You'd have to cap its fps with GeForce Experience.
