After some investigation, the crash issue is more common and our team is already on it. Please, be on the lookout for further game updates
In the meantime, you can try some of the solution which helped other players, e.g.
- Resetting game settings- You can access it by going to "C:\Users\<username>\Documents\Paradox Interactive\Crusader Kings III\"
Delete the CK3 folder and then re-launch the game.
- Swapping between Graphics renderer Vulcan/DX11 in the game settings
