I'm using PulseAudio. Every time I try to boot it with the launcher or in safe mode it crashes.
It used to work, only change I've done since is switch from pipewire to pulseaudio.
I've tried setting SDL_AUDIODRIVER to pulse, pulseaudio, and PulseAudio, but none of that worked

What can I do? I've attached the debug.txt.

Definitely an audio problem:
FATAL ERROR : Failed to open audio output device: "ALSA: Couldn't open audio device: Host is down"
Can you use ALSA?
 
Yes, so it seems the problem is deeper than that.

Aside from reinstalling the audio drivers, I don't really have anything else to suggest, I'm sorry!

IMHO the problem is not related to Pulse Audio at all. Try launching the game with lower settings and you will see it works.
