I have had two saves with Prussia and Great Britain where in both saves the game is repeatedly crashing at random moments in the 1900s. I am playing on MacBook Air M1 btw.

After a crash, can you reload game and save and carry on? Or that save always crashes at that point?

From that exceptions log the issue is in the GUI of the game, which goes through Apple's Rosetta emulation (as this game does not have a native Apple Silicon Mx version).
New versions of Rosetta only come with MacOS updates, so apply any new ones that come along. Meantime all I can suggest is to reduce the game's graphics quality settings as much as you can stand. If that does help you could then step them up bit by bit.
