I have been playing around with other people's mods (modding the modded..), and making some of my own (all for personal use, not redistribution), but as of yet, I have rarely modded hardpoints on mechs.

This is a specific question - for the Catapult C1 (and C4): is there a way to mod hardpoints that will show LRM-5 or SRM-6 sized missle launchers? I am assuming no, but a definitive answer from someone here would be of great help.

without modelling work? no you can't easiest you can do - create model, position it in unity and setup it spawning using custom hardpoints subsystem from CustomUnits mod.
 
Thanks - I wanted a definitive answer, and you gave it. Shame, as it would be quite some work (not to mention the fact that I am not versed in Unity at all, nor will have the time to do so).
 
I haven't tried it since the beta, but it is probably possible to put any hardpoint you'd like on any mech... as long as you accept the fact that the weapons won't be displayed if the model doesn't support that configuration.

Edit: Re-reading your question, I see that displaying the weapons was your primary concern... so that's a flat no, not possible without changing the model. Still seems worth clarifying for others taking a peek at the thread that the system is flexible if you're willing to drop that part.
 
Using CustomUnits it is possible to spawn at one mech weapon representation from any other (using hardpoint alias) - but it will looks weird - cause wrong positioning. It is possible to reposition them without unity - CustomUnits supports seting offset, scale and rotation. But it will be too much work for such little goal
