I wonder whether in game the western-european heraldic rules will be also applied to countries with another heraldic traditions... Thinking of course about very simple Polish system

Heraldic as in heraldry? Or as in hereditary? If the latter, we can see in the screenshot that there are different laws available, as salic, semi-salic etc. So I guess the answer is that the Polish system will be in.
