I couldn't find it anywhere, but are there any specific requirements for being able to build a new holding? Currently I have a castle and a city on the northernmost isle of the summers islands, however I can't seem to create a third holding even though it has an empty slot. the slot is dark grey and can't be clicked.
 
It's been like that for a long time for that province (I believe its atleast the one you mention)

From what I recall its a bug that happens when a county is set to have a certain number of potential holdings in the history files but there is not actually enough holding names set in the landed titles file.
 
Easy fix then, just look for the county's name in the landed titles file (or something similar, not all the counties have their names as displayed ingame in the landedtitles file) and add in a random barony title name, ie "b_(insertcountynamehere)_iii", then just wait until the dev team gives it a proper name in a later version.
 
This isn't all that impressive when you realize that the game doesn't start until 7999, which annoys me greatly....
If you can get 2000 years of gameplay in the mod then you are running some technology that literally comes form aliens.
Also we need those 8000 years of history because we have 8000~ish years of lore

You can always change the end date in the defines.txt file.
Tried that, didn't quite work I don't believe..... At least I don't think I did, my games are usually painfully boring, most of the noteworthy things in my games revolve around Aegon and Balerion, mainly the fact that Balerion has hilarious timing in when to take the long nap, usually either right near the end of the conquest of The Reach or a week after Aegon unites Westeros. Then there was the time I made Aegon a follower of R'hllor and he spent almost a year collecting votes to legalize slavery, I overthrew the monarchy of the Stormlands to form a merchant republic, and found out the AI likes to buy slaves from traders and then try to sell them back the exact same day.

Edit: I can, however, respect that the team working on this needed 7999 years for the lore and family trees
