Is it possible to mod the cadet dynasties so only stark bastards would gain this specific cadet dynasty?

Absolutely possible. If you just want to change the name of a pre-existing option for cadet dynasties, you need only go to the mod folder and common>dynasties>cadet dynasty.txt and edit the name of the one of the options.

It would be cool if there were a greater number of cadet dynasty options in-game, though. I'd love to be able to create a cadet branch for bastards born of two Great Houses, ie. a wolfdragon? A lionkraken? Badass.

Thank you for the reply, I know where to add and edit cadet dynasties, but I was wondering if I can add a prerequirement so only Stark bastards form the Greystark cadet dynasty, and not just any bastard.

That should do the trick to be honest, providing one of the cadet dynasties you edit is one of the pre-existing Stark cadet dynasties Unless you were meaning to create a fifth cadet dynasty option for Starks, which unfortunately I'm not sure about.
