I have like 10+ legions that are nothing but loyal units. I need to cut back a bit but I can't! All those units are just a pain in the ass.

If by 'cut back' you mean financially, then loyal units cost less to you than standard ones.

I meant financially. I had forgotten that the generals paid for them. Still, Would it be possible to do it or I'm I gonna have to send some boats to their deaths?
Disbanding loyal units is possible, it just costs more than disbanding standard ones but you would regain manpower (if i remember correctly). Sending them to their death by boat costs boats. When killing them off on land then you don't want them to reinforce and drain your manpower pool ever further.
