Do you have a better navy? If so, DOW for some random island. If not, attack a country that's an ally/tributary of one but not the other. Either way, break the alliance through a peacedeal. Might be better to keep them allied, though, lest one of them ally an even bigger threat.

If you have naval supremacy (which you really should have as Japan) you can declare a trade war on Ming, blockade them to spread devastation and then take max cash (don't take war reps since you're fighting them again soon). If you can handle them on land too then declaring on Ryukyu after your first trade war against Ming you can bring devastation inland, occupy Canton, Nanjing, Beijing to tank their mandate, take more money. When they start spiraling Korea should become easy pickings sooner or later.

How do I gain naval superiority in the first place? Last game I got it because I managed to vassalize orochoni, on which I land my troops, THEN attack mainland

My vassal superiority was obtained by way of using the money gotten from china in the first place

Declare war if u have ships blockade wait for Ming war support to go down peace them out after some years then actually start the war and wipe Korea. Probably include annul their treaties in peace. With navy guess you can take Taiwan, the island south of China that'll require a strait blockade and u can grab the Korea island. If you can grab to bottom of Korea plus the central mountain tiles build a chunky Fort with a rampart and next time now with your land commitment you just stay behind the mountain +3 defend bonus Fort till ming peaces which will be faster now with their army losses

How do I gain naval superiority in the first place?
Build shipyards when they're available, bring 5-10 heavies and a generous amount of galleys (like 30, plus you should queue up new ones as you lose them in battles) to beat the Ming navy. Go into debt & over force limit if you have to, you can recoup the costs through the trade war. A good admiral helps. The Atakebune naval doctrine is okay, but I think Free Oarsmen (+15% Galley CA) might be better as the coastal tiles in this region count as inland seas. The 10% Ship Durability you get from Japanese ideas helps too, it's the closest thing to discipline in naval battles. If you're going colonial then Exploration gives an extra +25% Naval force limit. Usually after consolidating Japan you want to start working on building up your navy to beat Ming.
 
As others have said, the goal is to inflict enough devastation on Ming to bring mandate below 50. Look at wiki to see how brutal this is to Ming. It’s a long strategy though.
