In the Mod Folder, you should have one file : the 'xxx.mod' file and one folder : 'xxx' which contains all the mod's files..
When I install a mod, I usually extract it in a temporary folder and then move the file and the folder in the 'mod' folder of the game.
 
You choose it at the bottom of the launcher. You should see 'default' in the drop down menu and choose the mod you wish to play, then press 'Start Rome'.
and no, you can't play several mods at onr time, unless you have the skills to modify the files to merge them together...

...which is not that difficult after all.

There are very few of us modders here already (due to shipping dates), so most mods tend to focus on some areas: MrNumbers :p on national ideas, Numahr on demographics, Land on colonization and bugfixes, myself on combat. AFAIK the only common file used in those mods is defines.txt, and it's so short that it's really easy to figure out what was changed and why.
 
unzip the file using WinRAR and then place the .mod file and the folder into the EU-Rome/mods/ folder, that should do it..

than cannot be a "xxx.mod"-file in the .../mod-folder. xxx means the name of the folder in directory .../mod where the downloaded mod should be in.
