I was wondering how those two games would be, had PDS remade them. While Blizzard's SC and WC are different form of RTS game are RTS focusing on tactical unit management, PDS' games are Grand Strategy - a genere of its own.

In my opinion, the rich history of these universes could be represnted better, making the game more epic.

I don't think Paradox would have done a better job with those two. I just can't think of a paradoxian StarCraft as a legitimate esport as was Brood War and is SC2, since i don't think paradox has that feel for balance.

Also StarCraft and WarCraft had their grand themes, with great wars and large scale invasions, but the story always focused on small groups of heros.
True is that for WarCraft, that especially WoW has because of its very nature being a mmorpg has affected the story telling (or atleast perception), but while WarCraft and StarCraft are very cliche fantasy/scifi and some story telling is questionable i don't tihnk paradox would have been better at it since they don't seem to me the storytelling type.

I'd love a WarCraft based grand strategy game or a CK2 mod
 
You mean how would they have been if Paradox made a grand strategy version? Because I don't think they would ever do a RTS version like the originals?

Or maybe they would RTGS: Imagine a fully realtime HoI.. but with Zerg. You don't build single marines but divisions of marines. You maneuver on a strategic scale and just see the results of your battles without any direct unit control. Creep spread on continental scale, government type hive-mind, zerglings freezing to death by attrition in winter... things like that probably.
