Please explain me in detail how to demand a province in a peace offer - where to click exactly? I have a 4-star winning status. I can only manage to ask for amounts divisible by 250. FAQ's (EU, Stefan's, Oranje's) have not revealed this to me.

I assume it's so... so sorry if i'm wrong... you have to capture the province before you can demand one. Just take one, offer peace again and you see how to do it yourself...
It does not work always.
If it does, the province will just appear in a list in the peace menu.
That very same problem drove me insane on my first day with EU.
Just wait until "pawns" get available, then choose which you'd like to have.
But you have to be aware you can get a max of three provinces that way, and even those almost only when the AI offers them to you. I've never been able to demand three provinces and have the AI accept, but maybe I just haven't tried hard enough.
Finally: no, you do not need to control the capital. This just gives you quite some arguments in peace negotiations, but it is not necessary.

Thank you, guys. I hoped that fast siege and assault on unprotected Paris (they all've gone South to fight Spain) directly will put me in a position to demand little bits of Picardie or Armor. Seems, I was wrong.
