How do i filter buildings, fences, planes, and so on, that i can manually plop on the map instead of waiting to grow randomly? is there a special category in the steam workshop?
or do i have to look into the desired category and are they named especially?

Ploppable buildings need the RICO-mod. If they list RICO as a dependency or the author puts 'RICO ready' in the description of his asset, then you will be able to plop it, if you have downloaded and enabled the RICO-mod.

If
being the key work there, sometimes it takes patience searching the workshop. Though, often RICO is overlaid on the listing screenshot, even if it is not actually in the asset title, so pulling up the list of asset type you can scan the list pretty quickly visually.
 
maybe a stupid question, but:
if i make growable buildings like industry or offices and i use plopable things like fences, stones, parking lots, ... what if the growable building changes and therefore it will look wired with the new buildings?
