Title says all. Im currently learning to make full map screenshots without the use of f12 (because it looks hella ugly) and one obstacle ive run into is the fact that you cannot hide the GUI while taking screenshots. Is there a command to hide it or is there some alternative ways to making a full map screenshot without using f11 or f12? Ive attached an example of the type of screenshot im trying to make. I do not know how the person who made it did it, but im trying to recreate that for my own playthrough.

Given the weird size of the image, I'd wager that it's using Print Screen/Snipping Tool/any other way of screenshotting built-in to a computer, plus cropping of some form.
 
That one was done taking screenshots of every part of the world and then putting them together with an editor (like Paint). You can see some weird cuts in the ocean, like one south of Sumatra/east of Australia and another one east of Mauritius and Réunion.

As for hiding the UI, unless you want to get dirty with interface modding, there's no way. Though I'm not even sure how possible it is. Best bet would be using the Snipping Tool like mentioned, or F11 and cutting the interface out afterwards.

Alternatively you could tweak F12 mapshots to make them better. This is more of a thing in the EU4 subreddit but it's doable for Victoria 2. Here are two tutorials (the video isn't the same thing you asked, but might be useful):
