Is there a good source to start learning this game?
I would like to know enough of this game to judge if Vic3 is a game for me.

I have Experience with EU & CK.

Should I follow the wiki and open the game with Brazil?
 
There are many different ways you can start the game. I heard Prussia and the USA as good suggestions for a first country to play as when I started, although I personally started as Russia. Really, it's up to you.
I would, however, say that Brazil isn't a bad country to start with. In Vanilla, you've got three looming wars - against Bolivia and Peru, against Columbia and its allies, and against Paraguay and (inevitably) Argentina. All of these are ridiculously easy given the sheer weight of men you can throw at each of them if you have to (though of course be mindful of your attrition), and the only existential threat to Brazil is France.
I would definitely say that it's a good country to learn as.
