All of us know the great terror of his conquests. But do any among you know how to stop them? I'd just love to send him packing to Dragonstone, but I wouldn't know how.

Kill him. Swords or knives, either will work.
 
I've seen him beaten back during about 50% of my playthroughs. That's without my interference. With mine its closer to 80%.

The reach and rocks army's combined with favorable terrain will withstand the dragon and because there is no gap in the event chain if he loses there he will (normally) lose the rest of his conquests.

If ye wanna skew the odds in your favour set your spymaster to sabatoge economy on dragonstone. After 5+ years of continuous war ageon ends up massively in debt which destroys his army's morale.

Oddly enough I've found commanders who will flee rather than fight the dragon on the field have more success against him. Look for leads from the rear trait.

Of course if the RNG gods are with you balerion might just die (either from age or from wounds). That stops everything.

Once I managed to hold out until 16 as the arryn boy, formed a a grand council and invaded the riverlands. Ageon was only left with the crownlands until he died.
 
It basically all depends on the AI's luch with dragons.
I have seen Harren's son kill Balerion, not much conquest after that, specially since aegon AI will stop invading if it's dragon dies even if it already has the numbers in men to conquer everything.
 
If you play Bleeding Years, Aegon invasion almost never happens. In actual invasion scenario he usually (for me anyways, played this scenario 6-7 times only) conquers Iron Isles and Stormlands then he either die in some stupid way or is beaten by Reach/Rock alliance. In said 7-8 playthroughs i've never seen him succeed like in book.
