So I finally noticed that there's an event that turns the Byzantine empire into the Latin empire if you become Catholic. Uhm, what the hell's up with that? Those two were very much totally different political entities separated by more than simple sects. So could anyone tell me where that event is located so I can disable it for my games?

This. Also, I would think that any Catholic Byzantine emperor would have to agree that the pope crowns the Roman emperor, and so, denounce the title emperor of the Romans completely (unless the pope wanted to give it to a Byzantine rather than a German).

Its in CK2Plus_maintenance_events.txt and the id is Plus.328.

It turns to latin if latin has no holder.
If latin already exists (post 4th crusade game starts), you can have catholic byzantium.

This also applies to catholic heresies.

All the other christian religions are also allowed, regardless of the existence of the latin empire.

Catholic (and heresies) + Latin Empire does not exist = Byzantium becomes the Latin Empire
non-hellenic or any non-christian faith = Byzantium becomes Empire of Greece.
