Installing EEP (on the Mac)

I, among others, play EU II on the Macintosh. Our problem is that we cannot get EEP to work for us. So, using this (Second post) we can get the necessary data for the EEP. However, how do we install it? Do we just copy the folders straight across? delete the old folders? copy the contents? What we need is a process here to get this working for us.

What should work is to simply unzip it into the EU2 folder. Nothing should be deleted or overwritten. The problem will be setting up the short cut to use moddir, and I'm not sure how to do that. Anyone know?
