If Portugal is recreated early enough by a human player should this damage Ireland's colonial aspirations as the nobles return home or perhaps they would stay or have made a lasting impression. The problem with an early human Portugese nation is that it would probably get annexed by Grenada or the human player may have vassalised it and annex it back again after ten years.
Admittedly these are my experiences of playing the other mod so things may have changed considerably in this area. Currently downloading the mod.

The starting map does look potentially more interesting as France is even more divided and a couple of Iberian provinces are Muslim so I feel I will have less temptation to crusade there.
I agree with you, and to some extent these things do exist, but they could also be better expressed in the game. Note that, really, we have only scratched the surface in terms of all the main outcomes and variants that we ought to be covering with the events.
Currently their is the Crusade of St. Stephan, but it only happens early on and involves only a few of the old Abe majors. The premise is that this is the last crusade the Pope manages to get going before Christian Europe has 'moved on' from Crusading and, to some extent, made its peace with the idea that there are heathens on the doorstep. They accepted them in North Africa, so why not in Iberia?
There is a Portugese reconquista sequence within the Eire file, and that allows for exactly what you've suggested above, but currently only within that context. Check the Eire and Portugal files for details.
There is a little event like that for Genoa.
That said, we do need to eventually work on more events for Christian Iberia, in case players want to play those minors, or they get lucky against Cordoba (it could happen). There would be compelling forces to have these minors coalesce into a unified state, if only to better face down Cordoba. probably we need such an event once Porto or Leon lose a province: they all form up into the Kingdom of Asturias, because there is strength in unity. Probably based around one charismatic individual.
