Hi everybody,
I'm a newbie and got struck playing Venice.

Around 1600 I had some colonies and trading posts in N. America bordering
Iroquis and their allies (England).
I DOWed Iroquis hoping to grab a province and burn some english TPs. After a
two years war i achieved a limited victory (2 stars), but Iroquis rejeced
all my peace offers, even if i offered 250D. England accepted a white peace
(only 1 star).

Is a complete annexation of Iroquis the only solution?
Is Iroquis behavior hardcoded?

The AI rarely bites if you offer a peace that's equivalent to the number of stars (2 stars = you get 1 province) unless they are on the ropes. And they probably did not take your peace offer becuase they felt they could whoop up on you with England joining in. BiB is right. Win some more battles and take some more provinces to get more stars, then you can ask for just one or two in the peace setlement.
 
From that point on i was on the ropes.

I cannot afford a bigger effort against Iroquis (the war was a stalemate), and most of my european provinces rebelled due to different religion (i grab Greece form Turkey, Cyprus went protestant :)).
The only viable option IMHO, was making peace, but Iroquis refused every offer, even 3 points less of what i gained (2 star + 250D offered) and never asked for peace.
I was very surprised because Turkey, Austria and England in previous wars never act this way and accepted my first offer when i asked 2 or 3 less of what i gain).

Only one good thing: i gave up and for the first time in two weeks i went to bed at the 'rigth' time :)
