I'm thinking of playing the AGOT mod but it will require me to drop the version of my game. I am already heavily invested in another mod which is tied to the current version of the game.

Can I switch back and forth between versions on Steam to play each saved game and mod or is that a generally bad idea?

You should have no issue switching back and forth between versions of CK2 to keep playing the saves. At least, I haven't had issues in the past when I did the same.
