I'd like to know what determine the quality of a pleading during a trial. My chatelain make always bad accusation and my prisonners are found innocent. Why ? It's random ?
 
I believe it's based on your Castellans Stewardship.

From a quick look at the files it seems to be based in diplomacy and traits (I've only checked the poor defence part, so I might de wrong). But I have no idea who is actually used to determine this(which character's traits and diplomacy).
 
From my ingame experience (so take it with a bit of salt, it might just be coincidence) trials usually goes well when the Diplomacy of my castellan is high. And yeah, it's he castellan that does the "prosecutoring". I believe the event text briefly states that as well.
 
It is your Castellean's diplomacy that is what effects it the most.
If you are a republic then High Judge takes precedenceof Castellan and if you are a Triarchy the other Triarchs take precedence
