I'd prefer several missions at once, one per type. By that I mean Army, colonial, trade, diplo, etc. That way you'd sort of have a choice, but not be wholly unconstrained.
Not an entirely bad alternative actually. Bit like 'Our generals are giving us a mission to improve our army' or 'Our nobles suggest a dynastic alliance with x', etc.
I agree with that country partition thingy, happened many times in history. But those should be made pre-war, with the option to backstab your ally for even more territory. And i want to be able to impose harsh peace treaties. Why must i settle for a couple of provinces if i occupied the whole damn country? It gets ridiculous when you invade the HRE, each province costs 40 war score. Bah!
You could put in a mechanic that reduced the cost of provinces if you occupied the entirety of your enemy.
