so here's the Problem: It's night, my solar panels aren't working, but I need power. So obiviously I have power accumulators.
My power demand is 25. I got 2 accumulators. That should work as each can supply 20 power(, right?)

As you can see, the moisture vaporator in the lower middle section of the screen is not working, the on closer to the dome is turned off.

Now. I can turn this one here ON and it will just start running, increasing my power demand to 30 which works just fine.

You can see the two accumulators behind the water towers (there's a third, turned off one behind the dome, but it's broken).

However, and here's the part that makes me really really wonder:
I can turn off the MOXIE during the nightshift which decreases the power demand to 28 - and the moisture vaparator will just turn on.

So - can anyone tell me what I am doing wrong here?
 
It looks to me like you have two power grids. The lower part where you are having the power issues isn't connected to grid supplying the dome which is what the power accumulators are connected to. That Stirling generator is powering most of the stuff at the bottom at night on its own but it cannot manage them all, when you toggle the oxygen off it shifts the load so other buildings can be connected.

To view the discreet grids click on the power icon. They will show up in different colours.

I think perhaps you thought that all buildings transmit power, this is not the case. Your water towers and oxygen tanks don't transmit power and they are what is separating your grid in two.

As a rule of thumb, if something doesn't generate or use power, then it doesn't transmit power through it to any adjacent hexes. Only exceptions I can think of are autonomous sensor towers, autonomous drone hubs and the autonomous forestation plants.

ah. You are correct. That was the answer. Apparently I destroyed a cable connection when Water extractor ran dry.
