After the Launcher, my game loads to about 5%, then crashes my computer entirely. Sometimes. It sometimes works after like 5-10 minutes of waiting, and other times It is a complete freeze. I have tried clean installs. I have tried removing all mods. I have tried updating drivers. I have tried Using only one monitor instead of my usual 2 monitor set-up. Please help

Looking at the error log you've still got mods installed:

Invalid supported_version in file: mod/ugc_1199002146.mod line: 9

If it's a specific save crashing chances are it's using this mod that is no longer supported. If you start a new game with no mods you shouldn't have these issues.
 
That aside, the other errors in that log look like a corrupted game installation. Please do a full **clean** re-install:

- move any valued save games elsewhere, and user empire designs.txt from /Documents/Paradox Interactive/Stellaris/ if you have made any custom empires or races.
- "uninstall" in Steam-Stellaris
- manually delete both the Steam/SteamApps/common/Stellaris AND Documents/Paradox Interactive/Stellaris folders
- re-install game in Steam, run a Steam Verify when done.
- add stellaris.exe to the exceptions list of your antivirus app; ESPECIALLY if you have Windows Defender, add it to the Ransomware "Apps Allowed Through" list.
- start the game with no mods active and test

In particular you need to make sure there are no files or folders left under either the Steam Stellaris or Documents Stellaris locations, before installing again.
 
This is after a brand new install with no mods installed. It still struggles heavily to launch, and still crashes every now and again

That's a much better error log. Did the clean reinstall not change or help matters at all? You don't mention it crashing the computer now.

I see you are on Windows 11 24H2, which is a severely broken Windows update that has caused problems across the whole gaming - indeed computer - industry.

Whether that is the, or a, cause of your problem here I'm not 100% sure. Certainly make sure you have the latest MS updates for it installed, but if that doesn't help all you can do is revert to 23H2 if you still can.
 
I did another clean install, and it seems to be functioning at the moment. I am still troubleshooting with mods to see if they were the cause, but I am having some inconsistencies with what works. Sometimes it does, sometimes it doesnt. I have had the full computer crash once since my last post
