Can u chose to send your sons to military academys (to get good generals) or monastrys (a bishop influencing the pope) or something like that???????

At least "something like that". There are ways to educate your sons - we don' t know the details yet though...

a School or a tutor seems the obvious thing to do....

I would think that for 1066 there would be only two choices....if you are a lesser noble, your son goes to your liege's court to train for knighthood or you could send them off to the monastery.
 
What in the world would be the point of sending your son and heir off to a monastry? Or a military academy? Send him off to be fostered at another king or noble's court and furnish him with a monk teacher for the softer arts. For the rest of his time he'll be surrounded by his older peers, who have spent the better part of their time learning how to kill their fellow human beings in the most efficient manner on personal, tactical and strategic levels. Get back one ambitious and tough little bastard who doesn't really know you all that well and is likely to rebel if his peers harboured a secret dislike for you.

And why send your younger sons to a monastry? Have them go through the same as what your heir is currently suffering, then arrange for them profitable positions either as churchmen or vassals of yourself(the Capetingian way).
