Sure - set Steam into offline mode and restart it. Be sure to make sure Steam is up-to-date (there's a 'Check for Updates' menu option) before setting to offline mode, though, as offline mode won't work if the client knows there's an update available but hasn't applied it yet.
 
Go | home | users | <your user name> | library | application support | steam | steamapps | common | crusader kings ii | CrusaderKings2.app . Right-click on it and choose "package contents", Contents, Game. In there is "ck2.app" , drag a copy of that (ie using the Option key) into the "crusader kings ii" directory entioned above.
 
I have a similar question. How do you do this with Windows 7? Play without starting Steam, that is. (Seemed better to jump onto this thread than clutter the forum up with a seperate one.)
 
Simply navigate to the CK2 directory under your Steam directory and double-click on ck2.exe .

Nope. Most games can be launched from its exe that has been bought from Steam without Steam being on. Only those that use their security aplications need Steam to be on. Crusader Kings II doesn't use it. Also just to note that it might be better to use the ck2game.exe as thats the launcher exe. You can make sure all the dlc's are active there when you launch your game. You can also chose mods there if you ever install one.

That was the next question I had, lol. I didn't use that one and the DLC wasn't loaded. I'll try it the other way next time. Thanks! :)
