I'd think that even cores on all of Iberia except the Granada heartland is a bit strong; I wouldn't give much of the south at all... perhaps Tago and Madrid and Valencia at furthest, with an opportunity at Algarve, Andalusia, Toledo later on if they are already on an upswing (the difference in warscore would prevent them from getting a lot from Cordoba all at once). Colonization would not be a big priority - as Portugal falls into the Irish sphere of influence, and Castile/Leon/Aragon would be in no position to finance outsiders like Columbus, the state would be limited to native Spanish leaders only, I'd think (and maybe not even all of those, since the population would be less due to the smaller territory).
I could actually see it being more of a political game, trying to play three sides against one another (possibly four)... Cordoba, the Irish-sponsored presence or pretenders to Portugal (and perhaps Galicia), the cross-Pyrrenees ambitions of whatever powers there are in the Aquitaine area, and perhaps a rival state or a seperatist movement in Catalonia.
P.S. I like the idea of either Asturias or possibly Navarra being the title used, rather than any of the historically more successful states (Leon, Castile, Aragon or Portugal).
