I was wondering if say I was playing as Greece and wanted to reclaimed the land Greece took from turkey in the 1920s could I invade and occupy the land and then sign a peace treaty could I keep all them land I had occupied or would I have to give it up or would I have to annex all of turkey?

peace treaties are possible but there is no guarantee that the AI nation will accept it. Usually they won't unless you offer a large amount of "reparations" or they offer it themselves. (which is as it should be in my opinion.. the idea of starting a war then forcing a peace treaty half way through that war isn't exactly sound strategy)
