The following problems seems to be a general one with the paradox game engine and a two graphic cards setup now frequently found on notebooks. I have nearly the same problem with HOI3. Playing CK2 for some time (an hour or so), some in-game pop up windows do not show up right. They are transparent or some boxes are missing etc., regularly leading to a crash of the game engine. Alt-tabbing out of the game helps only for a while, but its only a delay until the next occurrence. In the HOI3 tech thread it has been argued that this is due to a double graphic cards setup with the main graphic card going into power saving mode. But this was only speculation on the ground of reported pc configurations experiencing this problem.

First of all, your graphics driver is a year old, so update that and it might help. Stay away from beta drivers though.
Second, it can help if you disable the Intel graphics chip and then run the game. It might be a good test in any case. That should make it impossible for the actual graphics card to go into power saving mode, as well as making sure it is the right card being used from the start.
 
I had a very similar problem (same symptoms)
Note my system is very different (same OS, single Nvidia GTX470 as gfx card, 6gb ram)
Also it's worth mentioning that HOI3 does not have any problems for me, and my drivers are up to date.

The symptoms were exactly the same. It works intially but soon enough the backgrounds of the pop-up or upper-left dialog windows start disappearing. Sometimes some buttons don't show up either. Alt tabbing could fix it, but would cause it to crash relatively soon after.

Note that when I used windowed mode (as instructed how in intro thread here http://forum.paradoxplaza.com/forum/showthread.php?585701-Windowed-mode-performance-boost-extra-settings-file-locations-and-more! ) the problem goes away. I've managed to play several hours already without any of the problems. This isn't really a fix but seems to be a successful workaround that people who are having this problem can try.

Note that I had to change the resolution once (I changed it to that of my desktop) as the bottom got cropped at the other resolution and I couldn't use buttons in the start-up

Edit: Note that it did eventually have the problem, but it took a long time to occur. I feel it may be something related to a memory shortage/problem be it normal memory or video memory. Also possible this only occurs in Windows 7 x64 which less people have
