I`ve been exploring things concerning cultures and religions on this mod but several of the things I've tried didn't seem very fleshed out, so I'd like to know which religions, cults or cultures have interesting mechanics associated with them.

It'd be cool if there was a wiki of sorts explaining most of those but I didn't really find one.

At the moment I know that the major religions have mechanics and some of the Daedra cults have "Jade Dragon" like mechanics, but some of them don't (I've tried Azura and Hermaeus Mora and it didn't look like they had anything associated with them). Also, on my current playthrough I'm fiddling around with the "Ideal Masters" religion but it does not look like that I can do much with it.

If a list doesn't currently exist I'd really appreciate some tips about interesting culture / religion / cult combinations for me to try.

Let's start with the basics. Yes, most of the religions are not very fleshed out, but there are some. Black Dragon heresy, Dragon Cult and Ka Po Tun religions can summon dragons for piety/favor. Daedric cults have their own Jade Dragon stuff. If you worship them openly, secretly or as a patron(Old Gods religions, Khajiit panteon), after a month you get a button next to a minimap which leads to their respective interfaces. Ideal Masters religion is for necromancers and you can get a deal with them, where you get empire tier title called Army of the Wretched, enormous amount of troops and go on a rampage. After a time Ideal Masters must be satisfied with more and more souls, which can lead to your death.
 
The Wiki is doesn't provide too much info on the mechanics and religions this mod brings, so you're gonna have to do a trial and error approach.

An interesting combo is to play as any of the Cyrodiilic dynasties, and worthip Molag Bal or Mehrunes Dagon. An Empire of Cyrodiil that's ruled by such evil makes for a fun play through.

Try out the Tharn dynasty of Cheydinhal. They're always messing with evil stuff in ES lore.
 
The malacath Cult with orcish realm is pretty fun. You're a bit alone against the world but you have strong bonus and a goal (recreate Orsinium). You have also many challenge: Malacath will "come" sometimes to see if you're still worthy of leading you're people, and any of your child (and vassal if I remember correctly) can challenge you to take your place.
 
Thank you all for the input. I`ll do some more trial and error, mostly though I tend to go for very weak starting positions, which ends up placing me into combinations that don`t have too much flavour into them. Thankfully the suggestions provided should give me some interesting scenarios.

As for Orcish Cult of Malacath, that was the first thing I did with the mod, because I really like Orcs in ES lore. Even though I did form Orsinium with my first ruler (starting as a single county), their system (Code of Malacath) is seriously horrible (not the design). Their system makes sense in lore, and is probably why Orcs never had too much in the universe, although, what ends up happening is that you end up with a weird form of Ultimogeniture, because every single one of your sons challenges the ruler as soon as they are 16, and they have absolutely no chance to win against a well developed character. So, in other words, its cool, but an absolute hell to administrate well in the long term.
 
Hows the dragon cult? I started as the king of Whiterun and the 8 divines religion has a moral authority of 0 from all the heathen uprisings that are swamping the map. If I convert would I lose access to societies, and what would I gain in return (other than summoning DRAGONS)

Why doesn't Jyggalag have anything? I know he doesn't exist freely until later, but couldn't you put a check to see if the date is right? Or do you have any other plans for Jyggalag?

At the very least Sheogorath's period of upheaval should be called the Grey March.
