So, recently I tried to play as a peaceful Megacorp, however galaxy genereted 4 more corporations what ended in galaxy being split between 5 different Megacorps and no way to get a real edge.
After that I started wondering if there is a way to exclude somehow Megacorp authority from countries generator so only the player can choose it and make a profit on everyone else.

I tired to look for some information here, Steam forums and Reddit however didn't find anything useful.

No, to my knowledge that's not possible. The authorities don't allow the usual is_ai = no checks.

The easiest solution is to create a bunch of custom empires and force spawn them.
 
random_weight = { base = 0 } is what some mods do to prevent authority use. Stellaris/common/government/authority/authorities.txt, find the megacorp one and replace whatever weight it has with this. Not sure if it'll work though.
