It's 1735 now, and France has annexed southern England and half of India. I'm not sure there is any point in continuing, I've quit smoking and none of the other nations pose a threat. Austria is the closest, but their economy is only 65% of mine, and I could easily avoid war with them. The Asian nations are no threat at all, so I could just expand all over. Any ideas on how to increase the difficulty?

Probably what I should have done. I wish I knew how to convert France to Hinduism.
Just get broken by revolutionaries from a province with the faith of your choice. This may involve moving your capital and using cheats to get an event spawning the revolutionaries in said province. Let them take your capital and in a few years you'll be hindu! I am writing an Animist Tectonic Order AAR that I converted via this method.

...I've quit smoking...

Well done indeed :) That's definitely the main thing.

I know what you mean about the challenge, it can become quite difficult to motivate yourself at this stage. You could aim to stretch your border to Lithuania. Or convert to Protestantism and decide to declare war on and convert the whole of Europe
