what if i am a follower of the seven and I don't like the guy burning people; I can't revoke his title even though he's lighting peasants on fire

If your r'hllorite vassal happens to be zealous, it will be a short wait before they try some plot and you can emprison them. If you fail to do so, it turns into war and if you win and the realm is stable enough, you can revoke their lands.
If your r'hllorite vassal is not a zealoth, though, you can have them at your council in a mission that will keep them at your court and have your septon doing the rounds in trying to convert infidels to the Faith in your court. It worked smoothly as silk for me in turning half of the North to the Seven in 50 years in a Manderly playthrough in which the Starks took the Iron Throne and confided the North to my dynasty.

But if you reaaaally hate R'hllor, is not above intrigue and can't wait, you can try to start a plot to forge acusations against the troubling vassal, giving you an excuse to imprison them.
 
Sorry, but when I start a new game I am not able to choose new councillors, no one shows up as a option.....

What kind of ruler are you playing? Is it all council positions or just one or two? (Oftentimes you won't have a viable candidate for Septon or Maester as a lord- or sometimes high lord-tier ruler unless you specifically invite one to court.) Is there anyone in your court or among your vassals (remember, your vassal's courtiers are not yours to hire, only the vassals themselves) who it really seems should be eligible for the intended position?

I started as a custom count of driftmark (tested as a normal character aswell, same results). All council positions are unavaible, plus I have many courtiers that can be councilors.
At first I thought it was because of a few mods I had running together with AGOT, but when I tried without them, the problem keept occuring.....
Already tried to reinstall twice...

I can't reproduce your bug, what bookmark/starting date were you using?

When I had trouble with mods I had to disable steam cloud sync, uninstall CKII, delete all local configuration files, reinstall CKII, and re-enable steam cloud sync. That fixed everything right up. If you leave steam cloud sync enabled while reinstalling it won't fix anything since your backed up configuration files will resist destruction.

Hey, so found the problem... I didnt update the submod..... I am very sorry for that...
I was playing in the valyrian freehold date.
Thanks for the fast support though...

Also I did clean all folders to reinstall the game, like you said
 
Even though the 1.7 changelog says that Emperors of Valyria can now forge crowns, I'm not even given the chance to request a coronation, much less chose the crown. Playing in the Century of Blood.
