Is there actually a guide which walks you through about how to actually edit and create new or igsisting scenarios. I've been through all the links but I have found nothing which is of much use. I know how to do simple thing like change the country who you play as, but I don't have a clue on how to set up a new country and give it its own territory/units/gold etc. Or could Paradox or someone please create one in the not too distant future?

There is no actual guide but you can find some good pointers if you search this board. Also if you want to create a unique scenario you will have to poke around yourself.
