I recently tried this mod and after a 2 hour campaign in tutorial island a norse adventurer targeted me. I figured no big deal I can probably beat him. Then he declares war and I found out he has 7k troops compared to my 1k. Umm how was I supposed to prepare for that!? Now I may be a noob to this mod but out of my 1.5k plus hours in ck2 I never would of thought tutorial island would lead to an impossible scenario bar doing something stupid like letting the king of england get a claim on my throne and not have enough gold to out merc him.

Ps Just some clarification im not complaining about the mod or saying adventurers are handled poorly im just honestly curious how/if I can prevent rng from basically screwing me.

I think "tutorial" island is probably one of the most difficult places to play in plus. Especially in early starts. In TOG you start under an invasion, pagans take half the island and Great Britain ends up in nine or ten different realms. Ireland usually maintains it's kingdom though.

In later starts it's a bit easier, but still very dangerous.

The troop disbalance is more a question of you not having enough vs. them having too much. In general troop counts are higher in plus (e.g. Byzantium at it's height can easily push 60K troops, more if it grows and survives.)

A good start for Plus beginners is Harald Fairhar in TOG start, Benevento in millenium start, and Croatia in millenium and 1066.
The last one has it's perrils because Byzantium has a CB so you have to make nice to them. With benevento, HRE will probably not attack you but they might ask you to be a tributary. If they do I suggest you accept it since then you only pay 20%. If you opt for war and lose you pay 30%.

Harald's start is one I use for testing since it goes to tribals and it's fairly easy to both reform or convert and go feudal. Just select "Become King" ambition and create Norway.

One more start to consider is matilda of tuscany. Remember to marry matrilineally.

Sigurd Ring in 769 is a pretty solid start too. You can usually use the subjugation CB on your largest neighbor immediately and win fairly easily and steamroll Sweden with the become king ambition from there.
