These are my only two cents.
First Crusader King I although a simulation game was many times out of touch with reality. The transport of troops through sea lanes was very artificial. first in the 11th 12 th 13 14 century the whole european armies were subject to venetian, genovese amalfi and pizan leaders mood and political interests in order to achieve transport (remember Zara 1202). these has to be reflected in game or unless you dont have a navy you have to contact them to transport your troops. by just clikcing and getting charged an amount of money with an illusory transport navy is not enough and so far from reality.
Second the provinces especially for middle ages were deeply divided in agrarian countryside and the fortress city which was where the echelons of aristocracy fought for power and where counts or castellans (barons) in west secured the castles. Now here i would like to see different size cities which grow separataley from the size of fortification. Example Dyrrachium metropolis of adriatic. in 11th century was 20000 people city and its walls so thick that four knights could ride on top of them simultanoulsy (wall was built by Athanasos 508-515) and reinforted by Justinian. However when venetians took the city in 1392 although walls were there still there were not enough man to man those walls because to to the earthquake 0f 1273 in 1392 the pop was only 6000 left. So we need to have a province countryside which could be pillaged or burned for game effect and its population could seek shelter in mountains or city himself or wage on their lords or invaders guerilla war as happened in reality. And a provinve nevralgic city with castle. To build a game with two different dynamics in the same province would add a lot as well as make even barons fully enjoably playable to put their hands on the centre of the province.As well cities fell mainly because they ran out of supplies how is this thing going to be addresed here. Supplies was the main issue on a siege.
Third the republics have to be playable. With the rome engine even handling the fractions of venice would be great. The gran council and its procedures of doge electing were great political intrigues and luck.Plus families would be great to play in a maritime oligarchich republic.
Fourth even the muslim countries have to be playable. In the end of all the clash epecially 1096-1291 was mainly on that aspect. To prohibit playing the other half of the clash means you are prohibiting 50% of the living experience of that time.Seljuk turks, north african emirates etc are alll out of `reach.
Fifth i dont know if pops would be a good choice but at this time although nation ideal was a dream many pops hated to be ruled by foreign lords. As well even the wuality of rebelion or soldiers was not the same for all stratas of bedieval age. many knights had to be trained for years and in real fight 500 knights would put down easily a rebelion of 10000 peasants. Plus a pop with its own consience would add a lot to game politics and add fun as well in assuring his loyaklty in order to assure your dynasty. This interaction beetwen attracting the interests of artisans, merchants pesants in order to overpass f.e your elder brother need to be reflected in the gameand give life even to one province county wghere for the first 30-40 years you can only wait.
Sixth rulers should establish their own archbishoprics and thus enhance thr creation of a schism in case they get problems with rome or byzance. The game info on your relatifs entering church carier however i think covers this aspect.
