If I start out as Brandenburg (which, if I recall correctly, is a duchy), how do I break away from Germany/declare independence? (I’m pretty sure it’s possible to do that, unless I goofed.) Is that an advisable thing to do in the short or long term? (I plan to transfer this game to EUII and beyond, if that helps any.)

Also, are there any general tips for playing as Brandenburg in this game?
 
You can break vassalage when you go below 50% loyalty. You have little control over your loyalty though, except for events or by refusing your tropps to your liege. The latter is incidently the easiest way to get low loyalty. Once Germany goes to war with someone ... and trust me they will ... the king will most likely spam you with requests to mobilize. Every time you refuse your loyalty goes down (and he gets a claim on your title). So refuse him a few times and you can declare independence. This will put you at war with Germany though ... so plan carefully when you declare independence.

you can also get the Rebellious trait through event, and that will trigger more loyalty-lowering events, and even the chance to declare independence peacefully.
