How does one take over another country besides peacefully annexing them? For example, Granda, how do I conquer them militarily?

As BiB said, you need to set 'Forced Annexation' to 'on.' Basically, you can forcefully annex another country once you have control over all of its provinces. You have to offer them peace, and you will get the choice of complete annexation. However, they might refuse that offer and try to hold out on you if they still have allies who are at war with you. Also, majors are an exception, as you cannot annex them - you can only take their non-capital provinces.
Majors can be annexed if u tinker with the save game files.

However, you can only see the stats of the major powers in the archives, so it wouldn't be as fun to take them all out at the beginning.
Yeah, no fun to just see ur own graph. U can also add majors halfway thru this way, I shoudl imagine.
