I think someone posted something similar [nomadics in Ireland] on this back around when HL got released.

The answer is that a bishop takes control of a tribal province and converts the tribe to a church, which potentially spawns a horde because it registers the province as "empty", probably because nomads can only build temples. Thus it spawns nomad agitation.
 
Normally I would expect that (the surname) if he had been born in-game and then wound up in the holy order by asking if he could go, since the leader of the Knights of Santiago is automatically converted to Castillian regardless of what culture he was born as, but he appears to be randomly generated in this case.

Sympathy for other religions has been much more common ever since multiple SRCs in a group, whose members can induce the trait for their entire religion group at ecen the lowest rank, got added in. "De Donchester" would mean his dynasty founder was spawned by some Iberian cultured ruler with a capital in that province.
 
He has no family, and therefore no dynasty founder. He was a randomly generated Castilian character who for some reason is named after a place in England. You can tell he wasn't born in-game because he doesn't even have an education trait.

The Zunbils probably converted to Islam or the ME's religion to get a non-aggression pact. I'm more confused as to why they decided to split the Otgonbayars into 3.

Indeed, I'm surprised the Khans went straight for Germany but apparently took one look at the extremely wealthy Byzantine Empire and decided, "Nah, not worth it".

The Zunbils were part of the Mongol Empire too but broke off during some revolt I believe. They survived until the Mongols arrived by converting to a different religion
