Tbh, Victoria as Vicky isn't so much an abbreviation as an affectionate fan nickname, and that's what I'm thinking about with Stelly here.

I'd probably go with Stella myself. Fits well with Vicky 2 as far as I'm concerned. Stellaris by itself though is pretty much fine the way it is.
