I've found playing this option is imdeed fun, however, it seemed pretty difficult to build up my economy, and by the time i expanded my size and manpower i also had expanded my inflation to about 50% (loans bankruptcy etc.) any suggestions?

Playing Prussia You will need one thing during the first 100 years: patience. They are not a superpower in the beginning, but they will get very good generals as the game progresses. To prevent inflation like this, You should tet the treasury slider so, that You reinvest all Your monthly excess income. An inflation rate up to 0.3 is tolerable.
Be sure to turn to Lutheran. Also I found it is a good idea to apply for the Russian alliance.
I too started playing this "scenario". I'm in the early 1500's. The Tuet. Kn. got English to join our alliance. Well when France dow England I got dragged into conflict with Poland(allied with France). I got lucky. I took Danzig and West Prussia from Pols. I know from playing ealier GC that these are the only provinces Pol had that became Protestant, not to mention they are two of Pols richest provinces.
My advice too, is to be patient. Your generic leader's are good later in game as infantry firepower improves. I would also encourage trying to trade maps. Some lucrative CoT's may be oppen if you buddy up to the right folks.
