There have been times that in coward/very easy just came Vyatichs with it's big army, said- war.. and after next 3 month i'm just looking again on- "surrender" ... and they don't accept any peace proposal... not even if all counties excepting one i'm offering.. and.. i'm confused... i think i'm playing very carefully without any title grabbing.. or .. i don't know...

The Aggressiveness setting determines how aggressive the AI states will be. It is recommended to keep it at coward as it will otherwise mean that the AI gets suicidal and declares war even with no hope of winning.

But big states will still have no problem stomping on small states if they feel a need to expand.

Playing close to the big bad religious enemies like Cuman, Taifas of Iberia, Egypt, Seljuk Turks and Vyatichs can be hazardous, and your successful game can suddenly turn bad in an instant.

Often the AI will accept offers of your entire treasury, no matter if it is 4 gold or 400 gold. This does require you to have a positive treasury of course.

What does the difficulty setting do? Does it give you some sort of advantage in battles or affect what kind of events you get?

Difficulty has no influence on the AI asides from the prestige costs required to grab titles.
Higher difficulty tends to slightly increase the MTTH for good events, decrease it for bad ones, or to adjust gold rewards.
Difficulty is mainly a player change.

AI aggression should control how aggressive the AI is, but personally I find the game nearly unplayable with high values of this as the AI is suicidal.

Oh yes...even if you're playing the big bad Byzantine Empire, stretching from Mecca to Hungary, with borders stretching to the Euphrates, somehow the Seljuqs are still a pain to deal with.

I've recently realized that upping the difficulty decreases the rate of recruitment for your county/duchy/kingdom, but not for the AI. I just had an unpleasant encounter wherein I defeated the Emirate of Mallorca but did not vassalize them (with the result of both of our manpowers being sunk to about 0). A couple years later, they declared war on me, and although I was the rich King of Aragon and Duke of Provence, they had full manpower and I had virtually no troops except my vassals'. It made no sense. I love the high prestige requirement for grabbing claims with VH, but I'm going back to Normal, where recruitment is not just an arbitrary advantage for the AI.

That's because you're not being ambitious enough. First conquer something like France, Iberia, North Africa, and Italy ... THEN go kick some Turkish rear, grabbing Egypt, the Holy Land and the Balkans on the way. Don't stop until you're the only one on the map to hold King titles.
